Minestrone Soup

Creating a warm and healing soup is as easy as 1-2-3 when it comes to the Mediterranean. Often referred to as a poor man’s soup, Minestrone is an affordable way to kick off eating a Mediterranean Diet.  Focus on vegetables that are either in season or grab items from the freezer or canned food aisles.

Ingredients:

  • 2 Tbsp extra virgini olive oil
  • 1 carrot, grated
  • 1 celery, sliced thin
  • 1 small onion, chopped finely
  • 2 cloves garlic
  • 2 small summer squash or winter squash (based on season)
  • 1 cup chard or spinach (based on season)
  • 1 can fire roasted tomatoes
  • 4 cups chicken stock (low-s0dium preferred)
  • fresh herbs (parsley, oregano, thyme)
  • 1/2 lemon, juiced
  • 1/2 lb Pasta, cooked separate
  • Parmesan cheese, for serving
