Summer’s Bounty

Every year is a new year when it comes to gardening. Last year we planted four zucchini plants and maybe had 20 zucchini to show for the whole summer; whereas this summer we have 20 per plant and still going strong. As you can see from my last post (here), I’ve really been trying to be creative with my recipes and usage of zucchini. “Waste not, want not.” Right? So, I asked my Facebook friends what was their go-to, creative way to serve up zucchini. Well, one of my favorite foodie dietitians, Nicole Dolan (thanks girl!) shared a brilliant & simple idea…Zucchini Carpaccio.

Carpaccio

Are you familiar with the term carpaccio? Thinly sliced fish or meat with fresh lemon, sea salt, olive oil, and maybe some capers or arugula.  Are your tastebuds popping yet? In my Mediterranean Diet Cookbook For Dummies I have a salmon carpaccio recipe which I love, but now I’m wishing I had added this recipe to my 2nd edition, too! Needless to say, I hadn’t really thoughout about 1) serving up the zucchini raw and 2) transforming it with such simple flavors.  This is a WOW dish and absolutely one I’d recomment for any fancy meal or potluck. Give it a whirl and let me know what you think!

Zucchini Carpaccio

Serves 4

Ingredients:

  • 2 medium zucchinis
  • 1/2 lemon
  • 1/4 cup olive oil
  • sea salt
  • 2 ounces goat cheese, crumbled
  • 1/4 cup pine nuts, toasted
  • 2 tablespoons fresh basil leaves, thinly sliced (chiffonade) (or lemon thyme, oregano, parsley)

Directions:

  1. First, cut of ends of zucchini, then with a mandolin slicer, slice raw zucchini on the thinnest setting onto a serving platter.
  2. Squeeze lemon over the top and drizzle with olive. Season with salt per taste preference.
  3. Crumble goat cheese (or feta), pine nuts, and basil over the top and serve or leave at room temperature for 1 hour.

Serving suggestions:

Crusty French bread (sop up all that goodness!) & grilled shrimp
