Game meat has definitely become the star of many restaurant menus. Quail hunting is big throughout the country, and the meat takes quite a bit of effort to attain…makes you appreciate each bite even more! Quail has 6gm protein per ounce, so a small breast has about 13gm of protein (about the equivalent of 2 eggs). This recipe pairs the smokey flavor of bacon with the heat of a jalapeño. Jalapeños are packed with spice that also helps protect your body from inflammation! So kick up your super bowl party with this appetizer or serve over a bed of greens as a main dish.
You could also substitute dove or pieces of chicken in place of the quail in this recipe.
12 Quail breasts
6 Bacon slices, halved
3 Jalepenos, quarted lengthwise
Place one slice of jalepeno in the middle of the breast meat.
Wrap in bacon, and secure with a toothpick.
Grill until the internal temperature reaches 165 degrees.
