I may be the girl who prepares too much food when I have folks over for dinner…just maybe! But perhaps I do it for a reason, selfish reasons…I love leftovers! And not the leftovers you’re envisioning, I call them “carry overs.” I whip up new creations with the leftovers and give them a face lift. Out with the boring, reheated flavors everyone gets sick of and in with the transformed dinner make-overs! Honestly, it’s me being lazy, aka smart in the kitchen!
The other night I had a great group of friends over for a feast and we made chicken with pesto sauce (from my cookbook, of course) and today I’m reheating the chicken with mushroom ravioli, sautéed mushrooms, and wilted spinach. This meal pulls together in a matter of minutes, whereas if I had to cook the chicken & make more pesto I might have opted for eating out instead.

- Leftover beans and beef into migas the next morning
- Grilled chicken breast into any pasta or rice dish
- Grilled chicken breast into Tortilla Soup
