As if inspired by my own post I whipped up a simple pasta for lunch today. Due to my travels I’ve been keeping very little on hand, but traditionally keep pasta and nuts in my pantry. Fortunately, I picked up some fresh asparagus at the market and decided to pull all three together. Taking the idea that simple meals can be pulled together with the simplest ingredients I created this lunch:
Ingredients:
- 2 cups dry, small shaped pasta
- 2 Tbsp olive oil
- 1 lb asparagus
- 2 cloves garlic, chopped
- 1 cup walnuts
- salt & pepper, to taste
Variations:
- Lemon zest, fresh herbs, broccoli, red bell peppers, sunflower seeds, almonds, goat cheese, feta, and/or white beans
Directions:
- In a large pot bring water to a boil. Add in pasta and cook according to package directions.
- In a non-stick skillet heat olive oil over medium heat. Add in garlic and asparagus, sauté for 5 minutes. Toss in walnuts, season with salt & pepper, and continue to sauté until pasta is cooked. Drain pasta and add to skillet. Toss & serve.
