{Musicfest} Steamboat Bound and I’m Cooking Up…

It’s that time again….I’m off to Steamboat Springs, CO for the annual party, aka MusicFest!  Who doesn’t love a week full of skiing, live music, and friends???  I have to admit I’m behind the 8 ball this year in getting things pulled together! Last year this time I had my menu & grocery list already set up and spices packed up…now I’m typing up my list on the flight! Guess time got away from me.  But of course I want to share what I do have planned with all of you!  One of my favorite thing about MusicFest is feeding my friends!  It’s the greatest feeling coming into our condo to the smells of hot food awaiting us.  Most folks don’t take the time to plan out a meal or shop accordingly, but I will stress that if you do you will save 1) money, 2) time, & 3) you’ll recover from the rowdiness at a much quicker rate!  All the above should be enough of a reason to plan ahead.  Of course, as my best friend Kelly always says “Everyone needs a Wendy!”  Hmmm, perhaps everyone just needs some ideas to get the ball started.

Here’s my menu plan:

  • Frito Pie (Chili served over Fritos–Texas tradition!)
  • Carnitas (Shredded pork tacos)
  • Spaghetti with meatballs
  • Pulled Pork Barbecue Sandwiches
  • Minestrone soup
  • Lentil Soup

All of these recipes are simple with minimal ingredients and can all be cooked in a slow cooker while you are out playing!  My kind of meals!  Plus, these make for great leftovers for lunch.  I’ll be sure we have ample fixins for lunch, like quesadillas, grilled cheese sandwiches, and soups!
