On a Budget? Get in Season!

“I can’t afford to eat well,” “Fresh fruits and vegetables are expensive,” “Eating a salad sounds boring.”

Yes, I have heard them all.  So, it’s time to toss those thoughts out the door! Fresh fruits and vegetables are fabulous and inexpensive, especially when in season. It’s spring!  What’s not in season?! To name a few of my favorite springtime favorites would be strawberries, avocados, oranges, and spinach.  You can find out what is in season by checking out  http://www.sustainabletable.org/shop/seasonal/ Choose your state and the season and you’ll find out what’s cheap to put on your table…or take on the road!

Tonight I made a delicious and heart healthy dinner that’s simple to prepare (under 5 minutes) and easy on your wallet!

Springtime Salad

Ingredients:
3 cups spinach, washed and torn
1 cup strawberries, sliced
1/4 cup pepita seeds (any nut will do!)
1 avocado, cubed
1 Tbsp your favorite dressing (my fave is Brianna’s Blush Vin)
6 oz wine, to drink of course!
flat bread, to dip of course
1 orange, to curb that sweet tooth!
Directions:
Assemble and serve…and enjoy!

Stop dismissing fresh fruits & assuming they are costly!  When in season they can be very budget friendly!
