Quick Post: Date Bars, Stuffed Peppers, & New Nutrition Labels

I am going to step away from originality for this post, and instead toot the horn of some fellow blogging RD’s (registered dietitians). I follow these three blogs on my NetNewsWire account (where I pull in RSS feed and read as I please).  I hope you enjoy these posts, as well!

  1. Meal Makeover Moms: They posted a Date Bar recipe by Nancy Clark, CSSD, RDthat I am absolutely in love with.  Quick story–my hubby bought a big tub of dates to munch on during long climbs (rock climbing), and then burned out on them.  This recipe popped up just in time!  My recipe modifications: 1st I doubled the recipe (yes, I had that many dates), 2nd I used whole wheat pastry flour instead of any white flour, and 3rd I used pecans (why? because it is what I had).  We loved the recipe!  Fabulous fuel for the ultra sport enthusiast!
  2. Born to Eat: Leslie Schilling, MA, RD whipped up a fabulous recipe for stuffed bell peppers. Peppers are in season and if you head out to your local farmer’s market you may be able to find some, too!  I liked stuffing the orange, red, and purple varieties!  Thanks for a fabulous feast, Leslie!
  3. Balanced Health & Nutrition: Rebecca Scritchfield, MA, RD always delivers sound nutrition advice to the masses.  She definitely has a gift with delivering a clear, concise, and timely nutrition message!  Check out her latest post on nutrition labels.They seem to confuse many, so perhaps the change will help!  Thoughts?
